Winemaking

The fruit was grown on the Island Brook vineyard which is in the Carbanup sub-region of Margaret River. The grapes were harvested in the cool of the night and then fermented on skins for 21 days then pressed to barrel with 40% of that new French oak. Following malolactic fermentation, the barrels were racked off the lees then returned to barrel for maturation. Following maturation, the wine was blended and bottled in February of 2024.

Tasting Notes

This is a classic "old school" Margaret River Cabernet Sauvignon of exceptional quality. The wine shows lifted aromas of red fruits, spicy French oak and delicate mint. A rich chocolatey palate with hints of resinous oak is well supported by delicate tannins and a well-balanced acidity.
